LEARN TO MAKE BLUE CHEESE – 2 BLUE CHEESES IN 2.5 HOURS

This is a pre-paid event. All tickets must be purchased in advance. No ticket sales at the door.
This class is an intermediate level class, a class using rennet would be recommended as a pre requisite, although it is easier than you think. In this class, you will learning 2 different types of Blue cheese and 2 different techniques to make them. This class is 2 ½ hrs. long, and full of information, we will be covering a lot in the short period of time we have. This is a hands on class and you will be making the cheese in your group of 6 people, all participating.
We will begin the class making a pressed classic Blue cheese that is mild in taste. With this cheese we will be learning how to make the curds, press the wheel, brine the wheel then age the wheel. Each group will start with fresh milk and finesse it into small blue cheese wheel for each student and each student will take one home to age. While our milk is ripening we will mold a Stilton, a variety of blue cheese. Each student will assemble a blue cheese wheel to take home again to age. Our studies will involve learning how to press, brine, pierce and age our cheese at home and what to expect during our aging days to come and when to expect to have a finished product to eat.
During your experience in this class, you will learn simple techniques in cheese making that you will always use. We will also be discussing the best wine & beer pairings that go with these cheeses. Not only is this class fun, you will walk away with the desire to learn more about making home-made cheeses. You will leave the class with your own copies of the recipes of the cheese we made, the cheese wheels to age, and the knowledge to make your own cheese at home. Food and beverages are available for purchase at this venue.
